Tropical breezes, fresh salty ocean air, poolside drinks, and bright rays of sunshine are what this guilt free, incredibly moist, coconut lime mugcake will have you feeling with each bite. And, it's so easy to make, you'll feel like you're on vacation!
Coconut Lime Mugcake
1 banana (use a green tipped banana if on the 21 Day Sugar Detox)
1 egg
Zest of 1 lime
Juice of 1 lime
1 Tbs full fat canned coconut milk
1.5 Tbs coconut flour
1/2 tsp baking powder
2 Tbs unsweetened shredded coconut (plus more for garnish)
2 Tbs unsweetened coconut cream for topping
(place can of full fat coconut milk in fridge for at least 4 hours, this will separate cream to top of can)
Directions:
In a microwave save mug (larger is better) mash the banana very well. Add egg, coconut milk, lime zest and juice and whisk well with banana. Add dry ingredients and mix well. Microwave for 2-2:30 minutes. Allow to cool before removing from mug, as cake is very moist.
Scoop out a couple of Tbs of coconut cream for topping into a bowl and whisk slightly with a fork or small whisk for a creamy topping!
Garnish with some unsweetened shredded coconut & a lime wedge. Enjoy!
what if you don't use/own a microwave? Is there an oven version?

I have yet to try baking a mugcake recipe in the oven myself, however I have been told it will work. I am going to assume you would use a small ramekin (or oven safe coffee mug) and bake it at around 375*F. I'm sorry I don't have an exact answer for you! ReplyDeleteYou can always sweeten it with a tsp of raw honey. You could also use a few drops of liquid stevia if you use it (I know some people choose not to use stevia), which will keep it sugar free. The banana also helps to moisten the cake a bit, so it may be a bit more dry. It's difficult to find a fruit sweetener to replace bananas in baked goods. Rehydrated & pureed medjool dates also sweeten well. They will change the color of the cake, but sweeten it fine. You would only need about a spoonful of the puree (equivalent of about 1 date) as they are very sweet. Hope that helps!
DeleteCouldn't you also try unsweetened applesauce? That would give you the moisture content, without unnecessary added sugars. The amount may need to be adjusted, as I would think it would be even wetter than banana, but I would think it could be used...? And if the sweetness was not enough, additional sweetener could be used, from various types- liquid stevia, etc. Not sure if it would work, just a thought.

ReplyDeleteIt will definitely still work, but it won't have as much of a coconut flavor. If you can find a clean coconut flavoring you trust & are comfortable using, you can add a splash of that for the coconut flavor. The coconut cream topping will still have some coconut flavor, though.

ReplyDeleteI've just made this as a cake in the oven. I doubled the recipe and split between 2 little pans (ceramic). I baked for 35 mins at 375 degrees. Great recipe and will be made again.

Just tried this on my 7 the day of 21dsd it truly is wonderful... Didn't have a lime so used a lemon and used coconut butter on top instead of cream of coconut. This to die for thank you so much ... Totally met my need for sweetness.
